What ingredients will I need for the tzatziki sauce recipe?
- 3-4 small cucumbers or one large one, cleaned and 1-2 small ones for decoration, also peeled.
- 4-5 cloves of garlic melted in the garlic press tool
- ¼ cup olive oil
- 4-5 tablespoons of red grape vinegar
- Salt for the cucumber initially and a little more afterwards
- 2-3 teaspoons of ground black pepper
- A small amount of chopped dill (2-3 sprigs)
- 250 grams of strained yogurt (preferably 5% fat or whole)
How to Make Tzatziki Sauce
Step 1: Gather all ingredients.
Step 2: Peel cucumbers; Grate cucumber on the large holes of a box grater. Put it in a sieve and sprinkle it with a little salt. We leave it for a maximum of half an hour to expel its excess fluids and then we squeeze it in our palms or on a clean kitchen towel to dry completely.
Step 3: Put the garlic, vinegar, pepper, dill and half the olive oil in a bowl. Mix and add the grated and well-drained cucumber. Mix again with a fork.
Step 4: Beat the yogurt (especially if it is low-fat) with a little olive oil with an egg beater to make it creamier. Add the yogurt to the mixture with the cucumber and mix gently with a fork from bottom to top.
Step 5: Put the tzatziki in the fridge to cool well.
Before serving: Cut the cucumber diagonally into thick slices and salt them. We sprinkle them with a little vinegar and olive oil and put them in the tzatziki sideways until they are covered up to their waist. Grind a little more pepper, sprinkle with a little olive oil and serve.
How to Store Tzatziki Sauce
Store homemade tzatziki sauce in an airtight container in the refrigerator for up to five days. However, it’s important to note that the tzatziki is only as good as its yogurt. If the yogurt you’re using expires tomorrow, so does the tzatziki.
